1 cup chopped peeled mango
1/4 cup chopped red onion
1/4 cup minced fresh cilantro
1/4 cup lime juice
2 tablespoons minced fresh mint
1 tablespoon minced fresh ginger root
1/2 teaspoon olive oil
1/4 teaspoon salt
In a bowl, combine all ingredients. Let stand for 30 minutes before serving.
Can also be made a day or two ahead of time.
